Cookware Buying Guide

Understanding Hob Types
Before purchasing any piece of cookware you need to ensure it is suitable and will give you the best from your cooker. Here’s our guide to hob types:

Any type of cookware can be used on a gas hob. You must ensure the flame is regulated to prevent it from damage and discolour cookware.

Radiant ring hobs are most commonly found on electric cookers and are compatible with any type of cookware.

Induction cookers are made from ceramic glass. Underneath the glass a current flows through an induction coil creating a rapidly alternating magnetic field. When a pan with a base that can be magnetised is placed within this alternating field, powerful vortexes are created in the pan base that cause the pan, not the hob surface, to heat up quickly. Therefore only pans with magnetisable bases can be used on induction hobs.

Solid hotplates are usually made from cast iron and are found on AGA and Rayburn cookers. Pans with thick, flat bases are best for hotplate cooking as they distribute heat evenly and can withstand the high temperatures produced by these cookers. Choose any type of flat based cookware when using a solid electric plate hob, to ensure heat is evenly distributed.

Ceramic hobs are made from ceramic glass with a heating element underneath. Any type of cookware can be used on a ceramic hob. Cookware must always be lifted from the ceramic glass surface and never dragged as this can cause damage to the ceramic surface.

Externally, halogen hobs are similar to ceramic hobs, the difference being that the heat is produced by halogen lamps underneath the glass, which transmit heat and light upwards. Halogen hobs generate short bursts of intense heat so cookware with thick bases are ideal as they can withstand the high temperature. Pans with very shiny bases should be avoided as they can reflect the light from the halogen lamp which will cause the lamps to switch off.

AGA Stainless Steel is fine quality as it is made from 18 parts chromium to 10 parts nickel, this quality offers the best durability, rust resistance and retention of polish possible. Every pan is engineered with a 6mm heavy thermal base for maximum efficiency, the base profile uses patented wave technology which is designed to move down towards the heat source to make perfect contact.
The unique flat lid design allows for easy stacking in the oven, maximising the use of oven space and is also ideal for kitchens lacking in storage space. Hard Anodised Aluminium
Hard anodised aluminium is produced when a piece of aluminium cookware is placed in an electro-chemical solution and subjected to an electric current creating an extremely hard material that is non-porous, glass smooth and twice as strong as steel, whilst retaining the excellent heat conductivity of aluminium. The layer of aluminium oxide created is non reactive and resistant to chips and cracks, but should never be washed in the dishwasher as this will damage and discolour the cookware. All AGA Hard Anodised cookware products are made in the UK.

Aluminium is an excellent conductor of heat, therefore it heats both very quickly and evenly. The AGA aluminium kettle has a thick solid base, which ensures maximum hotplate performance and a non-stick interior.

Made in the UK, AGA enamelled steel baking trays and roasting tins possess a thin layer of glass fused by heat onto the surface of the metal to form a highly durable non-stick, scratch resistant finish. Heat resistant up to 310ºC and dishwasher safe. Excellent hard wearing capabilities, resistant against chemicals and abrasions providing a long lasting easy care finish.

Bake-O-Glide is a revolutionary parchment that can be used when baking and roasting in place of tin foil and greaseproof paper. It is non stick, durable, reusable and can be cleaned in the dishwasher. Bake-O-Glide is fantastic value for money and saves time scrubbing baking trays and roasting tins, it’s an absolute essential. The AGA Bake-O-Glide range offers pre cut shapes to fit AGA roasting tins, cake tins and the AGA simmering plate. Also available in a roll that can be cut to fit any bakeware item.

 Caring for you cookware

  • Never leave an empty pan on a heat source as this may damage the pan.
  • Always allow pans to cool before cleaning in hot soapy water.
  • Avoid using metal utensils and do not use scourers or abrasive cleaners.
  • Most saucepans are dishwasher safe but some are not – refer to the product care and use if unsure Ensure pans are thoroughly dry before storing away – this can be done in the warming oven of the AGA.
  • Some pan surfaces may need to be conditioned with oil once washed in detergent.
  • Ensure your pan is the correct material for the hob you are cooking on.
